Al Jawahar opened in 1947 directly opposite the main gate of Jama Masjid — India's largest mosque — in a location that made it, from its first day, the restaurant where the mosque's congregation would eat. The view from Al Jawahar's upper-floor windows is the Jama Masjid's facade — one of the most significant pieces of Mughal architecture in India, directly across the road.

The restaurant's nihari — a slow-cooked stew of meat and marrow, prepared overnight and served from early morning — is the preparation that defines Al Jawahar's morning identity. The nihari tradition in Old Delhi is tied to the pre-dawn and morning hours; Al Jawahar's kitchen begins preparation the night before so that the nihari is ready when the mosque's morning congregation disperses.

The broader menu covers the full Mughlai range: biryani, kebabs, korma, and the tandoori preparations that the Old Delhi tradition requires. But it is the morning nihari — eaten with naan, opposite Jama Masjid, in the light of early Delhi — that most accurately represents what this restaurant has been doing since 1947.
