The Kolkata biryani is a distinct preparation from Lucknowi or Hyderabadi biryani — lighter in spice, more generous with potatoes (a Kolkata addition), and fragrant with rose water and saffron in proportions that reflect the city's own refinement of the Mughal tradition.

Arsalan serves this community daily while simultaneously operating as a citywide destination: on weekends and during Eid, the queues extend along the road and the kitchen operates at maximum capacity.
